tonight's supper

breakfast for supper.  mmmm.  there's nothing i like better.  this little recipe comes from my university days, and while i was making it, it brought back alot of memories and fun times i had with the lovely lady i got it from.
it's soo delicious, i had to share.
first off, for the pancakes...


German Pancakes
6 eggs
1 cup milk
1 cup flour
1/2 tsp salt
2 tbsp butter or marg


mix all the ingredients well.  pour into an ungreased 9x13 pan.  bake at 400* for 20 min.


when it's cooking, it looks a little wonky, but it's fun to see what it's going to turn out like cause it's different everytime.

i kinda wish it didn't, but oh well, that's life.

next, you need, i repeat, need to make this syrup.  it totally makes the whole meal.  oh, by the way, i didn't say this was a healthy supper.  i said it was delicious.

Buttermilk Syrup
11/2 cups sugar
3/4 cup buttermilk
1/2 cup butter or marg
2 tsp corn syrup
1tsp baking soda
2 tsp vanilla

in a large saucepan, combine the first 5 ingredients, bring to a boil.  boil for 7 min.  remove from heat, stir in vanilla.
serve immediately with pancakes.

the sauce is tricky cause it does bubble up quite a bit, so make sure your pot is big enough


makes almost 2 cups, more than what you need, but it keeps well in the fridge.

" 911, what's your emergency?"

Oy.  yesterday was definately one for the record books.  how i managed to hold it together all day is beyond me.
my darling little angel (ha!) started out yesterday by deciding he's going to eat other children.  or at least one child in particular.  somehow i knew when i named him C he was going to be a biter.  
anyway, we got that problem all resolved, for yesterday anyway, and then after supper he talked to Nana & Papa on the phone.




then, he decided he wasn't done talking on the phone, so we gave him J's blackberry to play with.  this is something we do all the time, mostly because it has a keypad locking feature.  unless, of course, you press a certain button 3 times, and the emergency contact number (911) becomes unlocked and automatically dialed. i noticed the phone beeping, so i looked at it, and said "J, what's emergency contact?"  he took it and just hung it up.  not knowing 911 was already on the other line.  they called us back, of course, and J explained the situation, but they have to send an officer to check the situation out.  so we had a visit from a very nice police officer last night, and C is definately not allowed to play with phones anymore. :)

happy heart's day


Every February we celebrate Valentine's Day by giving flowers, candy and cards to those we love. We do this in honor of Saint Valentine. You may be wondering, "Who is St. Valentine"? Time to brush up on your Valentine's history!
Legend has it that Valentine was a priest who served during third century Rome. There was an Emperor at that time by the name of Claudius II. Emperor Claudius II decided that single men made better soldiers than those that were married. With this thought in mind he outlawed marriage for young men in hopes of building a stronger military base. Supposedly, Valentine, decided this decree just wasn't fair and chose to marry young couples secretly. When Emperor Claudius II found out about Valentine's actions he had him put to death.
Another legend has it that Valentine was an imprisoned man who fell in love with his jailor's daughter. Before he was put to death he sent the first 'valentine' himself when he wrote her a letter and signed it 'Your Valentine', words still used on cards today.
Perhaps we'll never know the true identity and story behind the man named St. Valentine, but this much is for sure...February has been the month to celebrate love for a long time, dating clear back to the Middle Ages. In fact, Valentines ranks second only to Christmas in number of greeting cards sent.

sick!

cold, flu and sickness of all sorts hit our house this week.  hard.  


i started last saturday (happy anniversary!)  and it made it`s rounds here all week long.  i finally just started feeling better last night after going to bed at exactly 8pm, sleeping until roughly 6am this morning, when i was woke up by this sound this morning.  ``Hey! Howdy! Hey!  My name`s Woody!``.  woody talks very loud in the morning, over the baby monitor.


i`m pleased to say that we`re all, as of right this minute, healthy and back to whatever our normal is.

broken road

a year ago today, we landed in cuba for our wedding.  i can`t believe that a whole year has passed already.. it seems like it was only yesterday!!
there were a couple of songs i had in mind for me to walk down the isle to (or beach haha). but this is the one i kept coming back to over and over again.  there is no other song that suits us more perfect than this song by rascal flatts.  even though we both came from times of heartbreak and sorrow, neither one of us would change anything in our past because the road that we were on, bumpy as it was, was leading us right to where we are now... at the perfect time.
